Do you like roasted garlicky cauliflower? Me too! I made sure each purple corn Que Pasa chip got some and of course gooey organic cheese in reasonable amounts (you decide full or low fat, I’m still debating and use what is available at the store). And what summer nachos would be without festive Tex Mex flavours – jalapeños for a bite, lime juice for a zest, onions for an extra bite and bell peppers for pretty pictures.:) This is my kind of summer nachos! They were so delicious!
Made with very few affordable organic ingredients in 30 minutes. Not soggy at all! I made sure because who likes soggy nachos?! The trick is to roast cauliflower first and then place on top of chips. Sprinkle with cheese and bake until melted. Top with fresh herbs and veggies, and a crowd pleaser appetizer is ready. Perfect for 4th of July or Canada Day weekend.
Eating organic and clean doesn’t mean no chips. And good nachos start with good chips like Que Pasa which could be found in Costco and Whole Foods stores nationwide (and almost any grocery store).

For this recipe, I used Purple Corn chips which are not dyed but rather made from a unique superfood, purple corn, with an addition of chia and quinoa. These chips are certified organic, low in sodium and are made of stoneground corn rather than a corn flour. Que Pasa is the only company in North America (that they and me know of) using real lava stone imported from Mexico to make chips from scratch.

I can’t stress enough the importance of buying organic corn products as 90% of corn grown in the US is GMO. I also am now careful not to fall (happened a few times) into “No GMOs” or “All Natural” claims on a package as it doesn’t really mean anything unless the chips have been verified by a 3rd party to not contain GMOs. I personally buy only organic to be safe. Further more, I find organic food tastes more delicious than conventional. Sorry not sorry but it is true (I recently tasted conventional banana for the first time in a few years and couldn’t believe the lack of flavour).purplecornachos
Que Pasa came up with 2 other new chip flavours besides Purple Corn: Ancient Grains and Black Bean (I tried them at CHFA West and they are delicious!). As all these 3 products are new, watch for them to appear in a grocery store near you. If you have a hard time finding Purple Corn chips, use Que Pasa White, Red or Yellow corn chips.

Cauliflower Purple Corn Nachos
Ingredients

Cauliflower:
4 cups cauliflower, chopped
1 tsp garlic powder
1/4 tsp salt
Cooking spray (I use Misto)
Nachos:
1/2 package Que Pasa Purple Corn Chips
1 cup cheese, divided
1 green onion, chopped
3 tbsp cilantro, chopped
1 – 2 tbsp jalapeños, sliced
2 lime wedges

Directions

Preheat oven to 400 degrees F, line baking sheet with unbleached parchment paper and spray with cooking spray. In a medium bowl, add cauliflower, garlic powder and salt; toss to coat. Transfer on prepared baking sheet and bake for 20 minutes. Transfer to a bowl and set aside.
Reduce heat to 375 degrees F. Place chips in a single layer on previously used sheet lined with same parchment paper. Sprinkle with 1/2 cup cheese, followed by cauliflower and topped with remaining 1/2 cup cheese. Bake for 10 minutes or until cheese has melted.
Remove from the oven, top with green onions, cilantro, bell peppers, jalapeños and squeeze lime juice on top. Serve immediately.
