I think if I could put Dragonfruit powder in all of my food to make it this gorgeous color, I would!

Pannacotta just has to be one of my favourite quick and easy desserts, and vanilla and coconut a favourite flavour combo. A panacotta always seems to indulgent. But this one is refined sugar free, vegan, and full of simple ingredients, but tastes like a dream. So soft, creamy and sweet.

Such an easy way to impress your friends at your next get together as well. So give these desserts a go, and then go crazy with all of the different combinations you can make.

So this one is basically just light coconut milk mixed with vanilla extract, dragonfruit powder and a vegetarian setting agent. To keep it vegan, use Agar Agar, or find a vegan alternative where you live. I used Jel-It-In from Queen Foods which is has no actual ‘gelatine’ in it! As each type of setting agent is different and requires different quantities. Make sure you follow the directions on your own packet for correct quantities per amount of liquid.

Mine set up to 500ml of liquid, so it was perfect for my 400ml tin of coconut milk!

I’ve also added blended fruit in the past, like blueberries, so give that a go as well.

Dragonfruit powder is reasonably tasteless, but adds this amazing vibrant pink to your recipes. It’s full of antioxidants

Dragonfruit Vanilla Coconut Pannacotta

(Serves 2)

400ml Light Coconut Milk

1 quantity of Agar Agar or Gelling Powder (follow the instructions per amount of liquid for your brand)

1 tsp vanilla extract

1 Tbsp Dragonfruit powder

1 heaped Tbsp granulated stevia or natural sweetener of choice

Pour half the tin of coconut milk into a saucepan and sprinkle over the Gelling Powder

Stir well to combine

Add remaining ingredients and blend well or with a stab mixer if required*

Heat gently to boiling point, stirring regularly

Simmer for one minute

Remove from heat and pour into some glasses or greased ramekins

Put in the fridge to set for at least an hour.
